To make the cake, preheat oven to 350°F. Grease and flour the pans. Beat the eggs to foam, adding oil in a continuous stream while mixing well. Separately, mix flour, sugar, cinnamon powder and baking soda. Add this to the egg mixture and beat, then fold in the carrots and the nuts. Pour into the cake pans and bake for about 30-35 minutes. Check with a toothpick inserted into the center. The cake is done if toothpick comes out clean. It is considered best to let it cool for 10 minutes in the pan. One can garnish with raisins or frosting as one likes.
