Canning Banana Pepper:Canning Banana peppers are easy and unparallel in taste. You prepare them;
store them in the can or jar and use only when you need them. Now you can enjoy banana peppers in off seasons also. Get 4 qt. peppers, 10 c. of vinegar and 2 c. water. Slit the peppers and cover in salt brine. Make the brine with 1 1/2 cups salt, 1 gallon water. Keep the peppers in the brine for the night. Drain the
brine next morning and rinse the banana peppers in cold water. Now mix vinegar and water. Bring to boil for 10 to 15 minutes. Put the peppers in hot sterilized jars with leaving head space. You can also add one to two
tablespoons of horseradish or 1 dill head or 1 - 2 cloves of garlic or 2 to 3 tablespoons of sugar. Cover with vinegar solution. Put in water bath and cook for 10 minutes. Alternatively you can buy ready
made canned banana pepper.
Stuffed Banana Pepper:A most simple stuffed banana recipe you require 10 banana peppers, 8 oz.
Velveeta cheese, 1 c. cooked rice, 1 can biscuits, 5 count and 1 can . First you have to split the banana peppers and remove the seeds and veins. Cut the cheese into cubes and microwave until melted. Add this melted cheese into some cooked rice. Stuff each pepper with this mix. Roll each biscuit very thin and cut in half. Place in greased baking dish. Pour over peppers keeping the liquid to a minimum. Bake at 400 degrees until biscuits are flaky. You can use cooked vegetables, boiled potato, mashed egg etc. instead of the rice for varying taste and flavour.
