Here, the coffee is packed into a funnel-shaped metal container, with a tube extending to the bottom of the reservoir. A few ounces of water are put into the reservoir. Then the top is tightly shut. When the water is heated, steam pressure builds up inside the vessel, till the only way for it to escape is through the tube, onto the coffee. The steam pressure forces the hot water through the tube.

A good double shot of espresso takes about 25 to 30 seconds. The pump pressure can be effectively used to control the temperature of the brew. Best quality espresso machines control the temperature of the water within few degrees of the ideal temperature. Water cooler than the ideal temperature causes the brew to taste sour, however, if the water is hotter, it results in making the brew bitter.

The Automatic way of Espresso: Automatic espresso machines are quite similar to the semi-automatic variety. The only difference is the ‘flow meter’ installed. When a certain amount of water has entered the flow meter, the pump automatically switches off. These machines automatically grind the coffee beans, tamp and extract the coffee in the same way that an automatic espresso machine does. After brewing, the machine automatically disposes the spent puck into a collection container. Many automatic models feature automated milk-frothing devices also.
