A basic carrot cake recipe is as follows: Ingredients -- 1 cup toasted and chopped pecans or walnuts, 3/4 pound raw carrots finely grated, 2 cups flour, 1 teaspoon baking soda, 1 1/2 teaspoons baking powder, 1/2 teaspoon salt, 1 1/2 teaspoons ground or powdered cinnamon, 4 eggs, 1 1/2 cups granulated sugar, 1 cup oil, and 2 teaspoons vanilla extract. To make, preheat the oven to 350°F. Grease and flour the cake pans. Then beat the eggs until they are foamy, add oil in a continuous stream, and mix well. Separately, mix the flour with sugar, cinnamon powder and soda. Add this to the egg mixture and beat, and then fold in the carrots and nuts. Pour into the pans and bake for 30-35 minutes, checking with a toothpick inserted in the center. If it comes out clean, the cake is done. It is best to let it cool for 10 minutes in the pan.
